About The Authors
Teri Kerr, M.A., R.D., L.D. was a registered Dietician with a bachelor's degree in science and a master's degree in the field of nutrition. She was licensed in the State of Massachusetts, where she had been a consulting dietician at a large prep school, a private nutritionist, and weight loss expert for twenty years.

She wore many hats in the forty years of her professional life; for the last fifteen of those years, she was co-owner and CEO of a supplement company.

Primarily, and through all of her other activities, she was devoted to her professional practice. During this time she gave nutrition-related service in a variety of venues - from school and community awareness classes to public lectures, as well as to her private counseling.

For the past fifteen years, Teri's practice focused on cancer patients, due in part to her personal experience as a breast cancer survivor. She also worked with clients who have other serious diseases.

Teri passed away on December 15, 2006 following a two and half year battle with a new, aggressive occurrence of metastasized breast cancer.

Karin Matthews came into this project purely because of her reputation as an excellent and knowledgeable cook. She has lived in the Shelburne Falls area for fourteen years and had cooked privately for Teri as well as for individuals with special diet needs. She naturally became the choice as the gatherer, creator, and tester of the recipes in this book.

The seed for her cooking flair was planted by her mother when Karin was put into service as sub-cook and bottle washer at 10 years old. This responsibility grew as Karin's mother faced various illnesses and truly needed the help. The apprenticeship to her mother, who was a masterful cook, initiated the influence that eventually grew into a skill.

Other influences came as a result of studying home economics and many years of travel in Asia. These further augmented Karin's understanding of how to use herbs and spices and other exotic ingredients.
